So how do we know he didn't glance at the instructions at all? All I see are his arms and the kit. I'm know it is possible to do this without instructions after building so many of the same kit; but without seeing the actual person building the kit, I am sceptical. Also, speeding up the video makes gaps in the build (for possibly referring to the instructions) less evident.
The video isn't supposed to be proof of the effort, just a cool time lapse video. You'll just have to take my word that I wouldn't lie about something so miniscule.
